Chris arrived in Perth almost twenty years ago from Wangaratta, Victoria. He opened Fraser's Restaurant in 1993, due to its magnificent location. He has since opened Bluewater Grill in 2003, then took over Indiana's in 2006 and relaunched The Old Brewery in 2007. All four venues occupy some of Perth's most epic locations.
Chris Taylor has consistently supported the philosophy of using local produce and "letting the produce speak for itself". It is a fine sentiment to harbour but cooking skills are needed to bring out the best of the produce. In the past fifteen years Chris has committed himself to promoting the use of Western Australian produce both overseas, locally and at Fraser's Restaurant.
He has travelled to Bali, Mauritius, Japan, Singapore, South Africa, Phuket, Jakarta, Zimbabwe, London, Ireland, Korea, the United States and extensively throughout Australia, hosting cooking classes, dinners and gala events to educate chef's and the general public of the quality of produce available in Western Australia.
Chris Taylor regularly hosts cooking classes and special events, predominantly at Fraser's Restaurant in Kings Park, where he spends most of his time fulfilling the role of Executive Chef.
He happily extends an invite to the public to dine inside the busy Fraser's kitchen at one of his 'Kitchen Tables'. Here guests gain an insight into the life of a chef and how the kitchen operates, whilst enjoying a specially created degustation menu with wines to match.
Chris is a big believer in showcasing West Australian produce. He also enjoys tapas and dim sum, where one can experience lots of small tastes, and many different flavours. Hence, he is big on degustation meals - a culinary term meaning "a careful, appreciative tasting of various foods", which focuses on the senses, and high culinary art.
