Chef Brad Leahy is one of the unsung heroes of the Perth restaurant scene. He is head Chef and General Manager of Bluewater Grill, and has been since 2005. Brad regularly hosts special events open to the public, including Degustation Dinners, themed Wine Dinners and Cooking Classes for adults, kids, social and corporate groups. He’s a very down to earth guy with a big heart for food and people.
Brad is well-travelled, and spent time in Turkey and the Middle-East when he was younger, and his true passion still lies with this style of cuisine. His menu at Bluewater is all about fresh WA produce that “speaks for itself and doesn’t compete with the view”, layered with sultry aromas and flavours of Turkey and the Middle East.
Brad is a big believer in showcasing West Australian produce, and he would love to “cook” for you – that’s what we call it in the industry... When chef prepares a degustation for you, he “cooks” for you.
What is a Degustation?
“Degustation” is a culinary term meaning "a careful, appreciative tasting of various foods", which focuses on the senses, and high culinary art.

Degustations at Bluewater Grill...
Brad offers a Degustation meal during any lunch or dinner setting (except special events), as long as he has a few days notice. He creates the menu 'on-the-fly', depending on what your preferences are and what fresh WA produce is best that day.
If you have any special preferences, ie – you want more seafood, or more red meat courses, or you would rather a cheese than a dessert course – then let us know at the time of booking. Of course, let us know about allergies when you book also.
It will cost $85 per guest for a five-course meal, which generally will include a dessert course. Our sommelier can also ensure you receive a glass of wine perfectly matched to each dish, for $140 per guest.
5-course degustation is $85.00 per guest (food only), or $140.00 per guest with matching wines
7-course degustation is $110.00 per guest (food only), or $160.00 per guest with matching wines
It's a very impressive meal, with all the cutlery changes and different courses on varying plates - and a great way to showcase, or take your time and experience for yourself, the best produce that WA has to offer.
